Machetes recently landed a residency at Hey Love, where they’re serving a contemporary take on Mexico City street foods. Veganizer is teaming up with Diego and McKenna Palacios of Machetes to highlight their vegan offerings, including three dishes that were created exclusively for this special collab.

The Machetes x Veganizer 3-course menu includes beet tartare, mushroom tetela, and mamey sapote ice cream. You can also add on the huitlacoche and nopales machete (a giant blade-shaped quesadilla) and cauliflower tinga tostada off their everyday menu. All these dishes are great for sharing too!

Pair your meal with a gorgeous cocktail or two from Hey Love! We recommend Mama Dut’s Gimlet with coconut fat-washed gin and salty pandan.

First: Beet Tartare
Charred nixtamalized beet, recado negro, chile güero, three sister nixtamal blue corn tostada
This is a variation of Chef Diego’s beet salad using recado negro black spice paste for an incredible savory, smoky, and earthy depth of flavor.

Second: Tetela de Hongos
Oyster mushroom, epazote, salsa tatemada endive, vegan nuac cham
Tetelas are corn masa pockets stuffed with savory filling and griddled until the exterior is crispy. This is Chef Diego’s take on the traditional street food.  

Third: Helado de Mamey
Mamey sapote ice cream, amaranth veil, almibar de gengibre, hoja santa
Have you tried mamey sapote before? Chef Diego describes the flavor profile of this tropical fruit as a mix of avocado, kiwi, mango, and squash.
